Taftoon, Taftan or Taftun is another type of flatbread  from Persian, Pakistani and Indian cuisines. “Taftan” is a Balochi word meaning “The place of heat”.  Other meanings of “Taftan” are “heating”, “burning” and “kindling”. The name “Taftan” has been used for several centuries and has been mentioned in literary documents and in “Shahnameh”, the national epic of Greater Iran. It is leavened flour bread, made with milk, yoghurt and eggs can be flavoured with saffron and cardamom powder and may be decorated with seeds such as poppy seeds and black seeds. In the past, it was baked in a tandoor or clay oven but nowadays it is also baked in a rotary oven or baking machine. Taftoon is made with little salt or without salt which is great for people with hypertension.
